The search for a beer with character
A unique range of blonde, brown, white and red beers
This new undertaking was initiated by the fourth generation! After many years spent trying out different methods to produce an extraordinary beer, “La Neness” was officially created in early 2020. Its name is inspired by a donkey called Neness belonging to the family of Christian’s brother. The animal is very fond of malted barley, and he enjoys it as a delicious treat after each batch is made.
The characterful beer is brewed in the old family cellar that dates back to the 1900s, which was refurbished in 2018 so that the brewery could be set up there.
From barley to bottle
The journey to create blonde “La Neness” begins when different types of barley, with varying degrees of malt, are crushed, then infused in spring water preheated to 72 degrees. That is the mashing stage.
After an hour and a half of maceration, it’s time for lautering. The malt that remains in the mash tun is then rinsed with warm water, this time at 78 degrees, to finish extracting all the fermentable sugars and aromas that will give the finished product its unique character.
The future beer is brought to the boil and various hops are added at specific stages, to bring other aromas, and a certain bitterness depending on the varieties of hops and the quantity used.
After an hour, the liquid must be cooled as quickly as possible to prevent any risk of oxidation!
Once it reaches 25 degrees, it is placed in a suitable tank and the fermentation process can begin.
Once this stage is complete, the beer is aged for a few weeks on its lees before being bottled. A second fermentation then occurs inside the bottle, and two weeks later, “La Neness” is ready to be tasted!
